This matcha is produced in the province of Guizhou from leaves harvested under under covered growing, as practised for the finest Japanese matcha. This technique encourages the tea plants to produce more chlorophyll and results in less bitterness in the leaves, giving the matcha greater smoothness and roundness.For greater freshness, the matcha should be used within six months of opening and stored in the fridge.
